no bake power seed cookies

1/2 cup of coconut sugar

2T hemp milk

3T coconut oil

1/2 tsp vanilla extract

1/3 cup of salted peanut butter or almond butter or really any nut butter

1 1/2 T coconut flour...although I omitted this because I didn't have it

1/4 cup of sesame seeds

3T raw sunflower seeds or slivered almonds

2T hemp hearts

1 cup of rolled oats

pinch of sea salt

handful of dark chocolate chips

Heat first 3 ingredients til sugar melts. let cool a bit, add remaining ingredients, spoon onto was papered cookie sheet. put in fridge for 30 minutes. remove and store in container in fridge. makes on cookie sheet full of cookies. original recipe from minimalist baker.

i made these as a custom order request but loved making them and the end result so much that i decided to offer them in my etsy shop. 

and here it is with the matching black diamond solitaire ring. the earrings have 3mm black diamonds and the ring has a .75-1ct black diamond in it....approximately 6mm.

easy pumpkin cupcakes...

Lucy and I made cupcakes a couple weeks ago. They were so delicious I ate 5 at one time after she went to bed.

NO JOKE!!! ;0)

EASY PUMPKIN CUPCAKES

1 can of pumpkin

1/3 cup coconut oil

1 cup sugar. I used coconut palm sugar

1/4 cup soy milk or hemp milk

1 tsp. vanilla

1 1/4 cups all-purpose flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. ground cinnamon

1/4 tsp. salt

FOR GLAZE:

1/2 cup of powered sugar

1 T of melted coconut oil

preheat oven to 350F.  line muffin tin with cupcake liners.

in medium bowl stir together pumpkin, oil, sugar, milk, and vanilla.  add dry ingredients thru the salt.  stir with fork only....not a beater, it will come out gummy.

fill liners 2/3 full.  bake for 22-24 minutes.  transfer to wire rack and let cool completely before icing. add sprinkles if you like.
